Konjac powder with over 90% particles whose size ≤0.125 mm (120 meshes) can be made from dried konjac (including slices, strips and chips) through physical drying or made from fresh konjac through smashing, quick dehydration or preliminarily removing starch and other impurities with alcohol wet processing. It can be used for sausages, flour products, pastry foods, bionic foods, beverages, ice cream, etc. It features good water retaining property, thickening property, gelling property and stabilizing property.
